Labor Day Picnic Recipes

Today we had the Shanklin Family over for a Labor Day Cookout. Everyone brought a dish so we only made a few things. Thought I would share a few easy recipes along with you.

Grilled Hamburgers  (As a rule, 1 pound of ground meat will make approx four (4) 1/4 pd burgers.)
Ground Beef (ground chuck, sirloin or turkey)
Worcestershire Sauce (1/4 cup per 2 pds of meat)
Dry Onion Soup Mix (1 pkg per 2 pds of meat)
Patty your meat and refrigerate until ready to grill. Add different cheeses to give a different flavor like Colby, Monterrey, pepper jack, sharp cheddar, blue cheese crumbles, Gouda, feta, etc.

(We had hot dogs and smoked bbq bologna too)

Easy Cole Slaw
2 pkgs shredded cabbage/cole slaw mix
2 TBSP Cavender's Greek Seasoning (garlic powder, onion powder, black pepper, ground mustard)
3 TBSP Apple Cider Vinegar
3 TBSP Sugar
1/4 bottle coleslaw dressing (or mix together yellow mustard, mayo and dijon)
Mix together, cover and refrigerate until serving (I don't like runny or really wet cole slaw, if you like yours really wet, add more cole slaw dressing).

Chocolate Eclair Pie
1 box graham crackers
2 cans chocolate fudge frosting
1 lg pkg instant vanilla pudding
3 cups cold milk
1 lg Cool Whip (thawed)

In a 9 x 13 pyrex dish, ice one layer of graham crackers with chocolate frosting. With mixer, mix your vanilla instant pudding with 3 cups cold mix. Gradually add cool whip. Spoon 1/2 this mixture on top of the bottom layer of iced graham crackers. Then add another layer of iced graham crackers. Add remaining pudding mixture. Top with iced graham crackers, adding extra icing to cover top like a cake all the way to the edges. Cover and refrigerate overnight before serving.
